Eggplant Cake
~ adapted from Home & Living ~
Set oven temp to 350 degrees. Cream the butter.
(I don’t like being “normal”– I like being “weird”– What’s n o r m a l? What’s w e i r d, really? Eggplant, yes– in cake.)
Stir 2 cups grated eggplant into the batter; then flour mixture.
Cool completely before frosting– Beat 4 ounces softened cream cheese, 1 1/2 teaspoons vanilla extract, 1 to 1 1/4 cups confectioners’ sugar.
Lay the flowers, put in the candles, give it some sprinkles.
