Creamed Spinach ~

Steam 2 1/2 pounds fresh spinach in a large pot after washing greens well. Excessive water on the greens help them steam better, so don’t bother with pat-drying them before steaming.
You can steam half the amount of spinach leaves to half the amount of (unsprayed) dandelion greens together…
It will seem like a lot, too much, to cook down– It’s not; diminishes quite a bit.
Drain well, then squeeze through paper towels or kitchen cloths; cut into small pieces.
Whisk in 1/4 cup all-purpose flour.
Continually keep whisking, 1 cup milk, letting the bechamel thicken slightly.
Fold in spinach (and dandelions if using). If having dandelion greens added to spinach, stir in crumbled gorgonzola cheese– perfect choice.
