Bitter-Sweet Greens

Bitter-Sweet Greens ~
~ Skirt in the Kitchen ~

Fry smoked bacon.  Stir-fry greens in bacon grease of:  Oriental cabbage, spinach, and un-sprayed dandelion greens.  Cook in grape tomatoes and seasonings of garlic powder, onion powder, freshly ground black pepper, coarse salt and ground coriander.
Add fresh herbs of cilantro, flat-leaf parsley and thyme.
Produce a bitter-sweet liquid– stir in dark brown sugar, red balsamic vinegar and Worcestershire sauce.  Taste for any adjustments in quantity of seasonings.  Crumble bacon into mixture.
Place wilted greens over fresh spinach and top with crumbled gorgonzola cheese.
