Crazy Cake

Heat the oven temp to 350 degrees.  Butter a 9-by-13 inch cake pan.
Sift together, straight into the pan, 3 cups all-purpose flour, 2 cups sugar, 6 tablespoons unsweetened cocoa powder, 1 teaspoon salt and 2 teaspoons baking soda.  Spread sifted ingredients evenly into the pan, blending with a fork or strainer.

Fill the first well with 1/2 cup vegetable oil; the second well, 2 tablespoons red wine vinegar, and fill the third well with 2 teaspoons vanilla.  Pour 2 cups water into the baking pan; mix with a fork until just incorporated– do not overmix.  Bake 45 to 50 minutes.  Cool in the pan, completely.

For the frosting, beat 8 ounces cream cheese.

Gradually beat in 2 cups powdered sugar and 3 tablespoon cocoa powder.
