Banana Bread with Cinnamon Pecan Streusel

Banana Bread with Cinnamon Pecan Streusel ~
~ adapted from The Naptime Chef ~

Preheat oven to 350 degrees.  Melt and cool 1 stick unsalted butter.  Mix together the butter and 1 cup sugar; then 2 eggs and 1 teaspoon vanilla extract.  

Peel 3 ripe bananas,
slice with a fork,
and mash.  Add to egg mixture.
Combine 2 cups flour, 1 teaspoon baking soda,
1/4 teaspoon nutmeg, and 1/2 teaspoon cinnamon.  Stir flour mixture into egg mixture.  Pour batter into loaf pan, or into 2 separate square pans, buttered and floured.
Pulse 1/4 cup softened butter, or melt it, mix into it– 1/4 cup chopped pecans, 1 tablespoon cinnamon, 1/2 cup light brown sugar and 1/2 cup flour.  Press the mixture lightly onto the top of the banana bread.  Bake 45 to 50 minutes or until the top is golden-brown and a tester comes out clean, free of crumbs.  Cool in the pan/pans for 10 minutes.
Carefully remove from the pan or pans, 
and continue to let cool on the rack.
