Anaheim Meatloaf

Anaheim Meatloaf ~
~ Skirt in the Kitchen ~
Slice and finely chop/mince 1/2 of one large purple onion.
Finely chop 1 Anaheim pepper, ribs and seeds included.

Chop fresh parsley and 1 or 2 cloves of garlic; add.  Also add a good amount of McCormick Grill Mates Steak Seasoning and Liquid Smoke.  Sprinkle very little kosher salt onto the meat and added ingredients.

Grate and add 1 large carrot.

Tear and crumble 2 slices white bread into 2 whisked eggs; completely saturate bread.  Dump onto meatloaf mixture, then 1 cup ketchup.  Massage into ground beef,

form into a firm loaf.

Cover it with Canadian bacon, chopped or left in slices.  Smooth over with ketchup, light drip of  Liquid Smoke and McCormick Grill Mates Steak Seasoning, and bake at 350 degrees;  three-fourths of the way through baking, brush more ketchup onto sides and top.  Bake from 1 hour to 1 hour-15 minutes.

Let stand for 15 minutes before slicing to serve.
