It’s the first snowfall of the season– You know I had to do something about it besides hanging greenery in the snow– under the windows with bright blue Christmas bows and lights… Did I previously mention that I’m the rebellious one? (Not the typical Christmas colors, but you know I have to be weird (slightly different).)
Snowballs ~
~ adapted from Hallmark Magazine ~
In a pan set over another pan of hot (not boiling) water,
melt 12 ounces white chocolate chips into 1/4 cup heavy cream. Stir until smooth.
Coarsely chop 1 1/4 cups slivered almonds– not sliced almonds like I have improvised, here, with the brown on them… But you could imagine how the sticks and dirt under the layer of snow on the grass eventually gets mixed into the snow when you are forming a snowman. (And it usually does when you run out of snow… unless you happen to live in Alaska or Colorado… or Maine.)
Stir in the almonds and 2 tablespoons bourbon or rum.
Pour mixture into an 8-inch square glass dish. Refrigerate to chill, uncovered, for 1 hour.
Cut into 64 squares (or do what I did– make them 1-inch balls… ). Roll into flaky coconut and chill until ready to serve.
