Puffed Oven Pancake with Brown-Sugar Banana Sauce

Puffed Oven Pancake with Brown-Sugar Banana Sauce ~

Preheat oven to 400 degrees Fahrenheit.

Whisk to beat 4 large eggs.  

Whisk in 2/3 cup of flour, 1/4 teaspoon salt, and 2/3 cup milk.  Beat with whisk until batter is smooth.

Melt in a 12-inch skillet (or baking dish) in the oven 2 tablespoons unsalted butter.  

As soon as butter is melted in the skillet in the oven, carefully pour the pancake batter into the skillet to bake for 20 to 25 minutes or until golden-brown.

Fifteen minutes before pancake is through baking, melt 1 stick unsalted butter in a small saucepan over medium heat on the stove.  Stir in 1/3 cup packed brown sugar.  Let it thicken,

then add 3 sliced bananas.

Stir and coat;

cook 2 minutes to heat through, then add 2 tablespoons rum and turn off the heat.

Remove the puffed pancake from the oven.

Pour bananas and sauce into the pancake that serves as a dish: nothing flows out of it.

Sprinkle powdered sugar and serve.
