Cookout-Campout Beans

Cookout-Campout Beans ~
~ Skirt in the Kitchen ~

What’s a campout without  BBQ beans or a cookout without beans, at all?

Before leaving for the campsite, mix together–

1 can great northern beans
1 can dark kidney beans
1 can chili beans
finely chopped green or red bell pepper
minced onion
dark brown sugar
1 tablespoon honey
1 or 2 finely chopped peppers in adobo sauce (depending on desired spicy flavor)
1/2 to 1 whole jalapeno diced
1/2 cup finely chopped cooked rotisserie chicken
ketchup-
BBQ sauce-
Golden’s Spicy mustard-

–The latter three, as well as the dark brown sugar, add according to individual taste, adding a little at a time to taste as you are blending ingredients…  then drop into the plastic bowl in which you will transfer the beans to a cooler then to the campsite– 1 tablespoon cold butter.

When at the campsite, pour into a black cast-iron skillet covered with aluminum foil– the best over a fire in the woods or on a grill rather than in the oven at home.
