Parmesan-Roasted Broccoli

March 27, 2011 By Susan Nuyt Leave a Comment

Parmesan-Roasted Broccoli ~
~ Ina Garten ~
Preheat oven to 425 degrees F.
Place 4 to 5 pounds broccoli florets on a sheet pan; toss onto the broccoli,
4 garlic cloves thinly sliced.  Drizzle 5 tablespoons olive oil onto the broccoli as well.  Sprinkle with salt & Pepper, roast for 20-25 minutes.
Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, 2 tablespoons freshly squeezed lemon juice, 2 teaspoons grated lemon zest, 1/3 cup grated Parmesan cheese, 2 tablespoons julienned basil leaves,
and 3 tablespoons toasted pine nuts.
I did not have pine nuts, so I substituted soy nuts, and put them on the broccoli before roasting the broccoli in the oven.
