Husband’s Chili Colorado

Let him into the kitchen.  Let men cook, love you– even like you, romance you– with food.  Why not, ladies?  Oh, not this one– He wears my ring.  Get you a man to cook for you once in a while, appreciate him, love him.  Don’t bark, don’t bite; be nice.  Be kind so he can’t blame it on any particular time of the month; can’t blame you for being woman.  What happens upstairs begins downstairs where there are pots and pans, even dirty dishes.  Let’s stop at “dirty” and get on with the recipe…
Husband’s Chili Colorado ~
~ Skirt in the Kitchen ~
Cut and trim fat of 2-3 pounds top round beef…
One half to 3/4 cup of flour, season with salt & pepper…

…  Coat lightly with flour; shake off excess…
…  Have a heated skillet with enough oil to cover bottom of skillet.  Add oil as needed.  Work in batches, and acquire good colorization on the meat, as this is where the flavor is. 
After frying is done, put the meat in a heavy-bottom pan or Dutch oven…
In a food processor, process 6-ounces tomato paste, 5 teaspoons chili powder, 2 teaspoons ground cumin, 2 teaspoons garlic powder, 1 teaspoon onion powder, 2 cups water, salt & pepper, and a 7-ounce can of La Costeña Chipotle Peppers in Adobo Sauce (Pull the peppers out of the Adobo Sauce and add to the food processor; the more Adobo sauce you add, the hotter the Chili Colorado you will have.)  Process well… 
…  then stir into meat in Dutch oven.  May wish to add other peppers, or powdered peppers in the way of seasonings, if desired; such as– Ancho. 
Heat and stir well over medium-high heat until it begins to boil.  Cover and reduce heat to simmer for 1 to 1 1/2 hours, depending on thickness of meat in the sauce.  The longer it simmers, the more tender the meat will become, as well as, build the spicy heat of the meat in its pepper juices and seasonings.  Stir occasionally to keep from sticking to the bottom of the pot, more towards the end of the cooking time that is alotted or needed. 
You may like this eaten over tortillas.  If so, heat tortillas on a skillet for approximately 10 seconds on each side…
…  or you may prefer Chili Colorado on a plate with refried beans on the side with tortillas rolled up to have as you would bread with a meal…
…  Preferrably to my husband’s delight, he enjoys this with refried beans on a tortilla, Mexican rice added, then the meat; white cheese– optional. Roll this up– eat like a man!
(For a much milder version of this, leave out Chipotle peppers and Adobo sauce.)
