Chocolate White Chocolate Chunk Cookies ~

1/2 pound unsalted butter, at room temperature
1 cup light brown sugar, packed
1 cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs at room temperature
2/3 cup good unsweetened cup cocoa
2 cups flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 pounds good white chocolate, coarsely chopped
Preheat oven to 350.
Cream butter and both sugars until light and fluffy (paddle attachment). Add vanilla and eggs, one at a time. Add cocoa, mix again. Sift together dry ingredients and add to chocolate batter, mixing on low speed until combined. Fold in chopped white chocolate.
Drop dough on baking sheet lined with parchment paper. Use an icecream scoop, then dampen fingers with water to slightly smash down on cookies before baking. Bake for 15 minutes, cookies seeming to be undercooked, but remove them from the oven, let them cool a tad-bit on the pan, then place them on a cooling rack to finish cooling completely.
