Roast Mix

Hearty, healthy tasty snack with a sugar-salt savour.  The lights are dim.  There’s a fire lit in the fireplace; maybe no lights glowing but the light of the fire.  Your loved one is in a chair on your left, and there’s contentment in the air, a coziness to spare.  You are warm and comfortable by the fire with the popping and cracking of the firewood.  It is cold weather season, and all is warm inside with this mix to snack on late evening with someone to enjoy it with, along with good conversation. 
Roast Mix ~
– Skirt in the Kitchen –
1/2 cup pumpkin seeds
2 cups water
1/4 cup shelled pistachio nuts
Walnuts
Extra-virgin olive oil
Coarse salt
Cinnamon
Sugar
Nutmeg
Bring pumpkin seeds to boil in 2 cups salted water; simmer for ten minutes.  Drain off water.  Place on cooking sheet– pumpkin seeds, walnuts and pistachios.  Drizzle oil over content; salt, sprinkle cinnamon, nutmeg and sugar. 
Cook for 10-12 minutes, tossing with a spatula halfway through cooking time.
