Roasted Vegetables

Choose any kind.  Not only are they good for you, but they can taste good.  Introduce them to your children early.  There is no right or wrong to this; be careful not to over-cook them when roasting.  
Vegetables in this photo are acorn squash, fingerling potatoes, celery, carrots, zucchini, pearl onions, scallions, button mushrooms and anything else I may have left out, forgot to mention besides drizzling them with olive oil, then Kosher salt.  
Out of boredom or something for sides to set with your meal, you can do this, having different vegetables every time.  It’s okay to let your hair down and make meal planning easy for a change, for a week night.
