Oatmeal with Peaches, Coconut & Chocolate

It is not your mother’s oatmeal, what she fed you with your siblings on a cold day in winter before catching the bus for school on those mornings when you did not want to shell out of bed… Okay, maybe it is hers, just your version of making it interesting for your own children to eat…  whether in summer when the peaches are in, or in winter with peaches that were preserved in the freezer, thawed or canned for a chilly winter’s morning. 
Just follow the cooking directions on the back of the Quaker Oats box; then when it’s cooked with milk and butter, cinnamon, honey and a little sugar along with wheat germ and ground flaxseed that the kids don’t know you added for their own health benefits, put some flaky coconut, peaches, chocolate bits and your choice of nuts over the top in each bowl.  Evenly scatter some mint leaves, spearmint; enjoy this change of oatmeal that some people have vowed as children to never eat again, as adults; never feeding oatmeal to their own children…  This mom does.
