Who can resist this, really? And it is even better with a sip of dry white wine or red. It is appropriate for evening; just seems to go well for a quaint night with your spouse, dinner at home and a movie. You don’t have to dine out to have this. It is simple. If you want to, you can dine on this alone and not miss anyone, for it being so delicious and all yours. But share, if you can; it will be the more worth it…
Alla Carbonara~
1 pound angel hair pasta
about 1 tablespoon of olive oil
8 ounces lean applewood smoked bacon, chopped in medium-size pieces
4 eggs
5 tablespoons heavy cream
little bit of Chardonnay
salt & pepper to taste
4 tablespoons or more of freshly grated Parmesan cheese
raw spinach leaves
Cook angel hair aldente.
Heat olive oil in a heavy-bottom skillet; cook chopped bacon.
Beat eggs with cream in a small bowl. Season with salt & pepper; then add egg mixture with half of Parmesan cheese in skillet, then toss in drained angel hair directly from pot to skillet, stirring well. Drizzle Chardonnay and a little more olive oil. Immediately add the spinach leaves and transfer to a warm bowl, mixing the spinach leaves in with the pasta to slightly wilt the spinach. Add more Paremesan.
