Bacon-Cheese Spaghetti Squash

October 31, 2015 By Susan Nuyt Leave a Comment

I didn't exactly know what to name this.  The bacon and the cheese make this "pop" with taste, so I suppose I will refer to it as Bacon-Cheese Spaghetti Squash. This can be for breakfast or for a regular meal with nothing served alongside it. Soak the seeds for a few minutes in warm water if you want to roast them for the meal or just have them for a snack. I … [Read more...]

Cornbread Cottage Pie

October 20, 2015 By Susan Nuyt Leave a Comment

This is meant for comfort while satisfying the taste of a complete wholesome meal. Cottage pie is made with beef--I'm going for hog.  Fat hog.  Good wholesome living from farm-fed ham for a good meal at suppertime. Cottage pie is made also with creamy leftover mashed potatoes over the top of a beef stew or any combination of vegetables--as long as there's beef in the … [Read more...]

Summer Salmon Patties

August 13, 2015 By Susan Nuyt Leave a Comment

This takes my breath away.  If you have certain foods from your childhood, you know what I mean--it's what my folks made, my mom and dad.  Now, and for all the years since then, my mother has continued to make salmon patties this way.   It's my parents' way of making salmon patties in the summertime. My apron strings are tied up into this--in this moment, in this memory I have … [Read more...]

Chicken-Broccoli Casserole

July 19, 2015 By Susan Nuyt Leave a Comment

I love summer for how simple it can be--or ought to be.  It's got that easy-going vibe.  After all, it's short-lived--it's a season, so why not make it a laid back time of year that you can truly enjoy? I took a peek at the back of a Jiffy box, found a recipe, but doctored it the way that I wanted it to be.  To be fair, I made Jiffy's version first, then mine.  I … [Read more...]

April 18, 2015 By Susan Nuyt Leave a Comment

Sriracha Pork-Turmeric Potatoes, exclusively Skirt in the Kitchen It's time to cook outdoors again.  The weather is pleasant.  It's an early spring, after all.  I'm confident that seeds can be planted in the ground without there being another frost. … [Read more...]

Lentil Chicken over Stuffing

February 14, 2015 By Susan Nuyt Leave a Comment

Lentil Chicken over Stuffing, exclusively Skirt in the Kitchen I like the practicality of cooking, what it can be, and how things come together when there's creativity and a desire to provide.  Just with a little common sense, some hunger, and flavorful taste buds, a person can feed a family!  Some meals are thrown together, and a flop; others are surprisingly good! … [Read more...]

Fried Chicken and Pumpkin Blossoms

August 21, 2014 By Susan Nuyt Leave a Comment

Fried Chicken and Pumpkin Blossoms, exclusively Skirt in the Kitchen Fried crispy chicken and pumpkin blossoms go hand-in-hand just as well as a cheeseburger and fries but it takes eating a pumpkin flower for the first time to know it. … [Read more...]

August 6, 2014 By Susan Nuyt Leave a Comment

Ham Bean Chickpea Stir Fry, exclusively Skirt in the Kitchen This summer dish has everything needed for a complete meal, the meat and vegetables.  It's quick and easy to put together when in a hurry.  With a slice of buttered white bread, how can it go wrong. … [Read more...]

Orange and Cilantro-Chive-Butter Roasted Chicken with Potato Wedges and Two Sides

May 14, 2014 By Susan Nuyt Leave a Comment

exclusively Skirt in the Kitchen So far, this is the way I prefer roasting my chicken.  I love the freshness, that aromatic flavor of a lemon-roasted chicken, but it's not my husband's or my children's favorite.  I end up being the only one eating the lemons and the meat that roasted with the sunny dominant flavoring of the lemon which tends to saturate in parts; so what fun … [Read more...]
