No-Bake Maple Pecan Brownies
~ adapted from Vintage Savoir Faire ~
In a food processor, pulse to crumble 1 cup pecans, 1 cup pitted dates
and 1/3 cup unsweetened cocoa powder. If dates are not moist enough, soak them in hot water for 10 minutes; drain before using.
For the frosting, pour into the processing bowl 1/4 cup pure maple syrup.
Add 1/8 cup unsweetened cocoa powder,
1 avocado, dash of cinnamon, pinch of salt,
and 1 tablespoon vanilla extract.
Frost and refrigerate for several hours or place in the freezer for half the time to set up before serving.
Good to eat with popcorn.
