Slumgullion

Heat oven to 350 degrees.  With unsalted butter, grease a 13 by 9-inch baking dish.  Chop 1 green bell pepper and 1 onion.

Cook onion and bell pepper in oil over medium heat until softened.

Break apart and stir in 1 pound 85 percent lean ground beef;

then 1 tablespoon finely chopped fresh oregano and 3 cloves minced garlic.  Stir in 2 tablespoons flour and cook 1 minute, then 1 28-ounce can diced tomatoes, 1 cup chicken broth, salt and freshly ground black pepper.  Bring to a simmer and cook until mixture is thickened but still saucy.  Remove from heat, cover to keep warm.  Cook 1 pound angel hair pasta in 4 quarts salted boiling water al dente (not quite done all the way to prevent sogginess).  Drain.  If pasta sets longer than 5 minutes, toss in 1 tablespoon olive oil.

Grate 1 pound (4 cups) extra-sharp Cheddar and Parmesan for 1/2 cup.

Repeat layering with remaining pasta, sauce, cheddar and Parmesan.  Combine plain dried (panko) bread crumbs and 2 tablespoons melted butter; sprinkle on top.  Bake until bubbly, 30 to 40 minutes.
