BBQ Pizza Chicken

Before pizza dough is made, before you assemble pizza toppings for baking, consider SITK’s original BBQ sauce– recipe follows….
SITK BBQ SAUCE ~

Staples and ingredients needed-
In a large heavy pot, heat 3 tablespoons olive oil. When oil is hot enough, saute 1 small minced yellow onion, 1 small minced white onion, 1 minced banana pepper, minced garlic– 3 cloves; mince 1 small or 1/2 of a medium-sized red bell pepper to add, as well.
Mince and add 1 quarter of 1/2 of a golden delicious apple, then immediately add staple ingredients: 1 full 36-ounce bottle of Heinz ketchup, 1/2 cup packed dark brown sugar, 1/8 cup Liquid Smoke, 1/8 cup soy sauce, 1/3 cup dark molasses, 2 tablespoons brown spicy mustard…
Wash well– 1 1/4 cups blackberries, unbroken.
When everything has been added, crush the blackberries with your fingers into the sauce.
Stir, bring to a slight boil, not a full boil, and do not keep on a boil– . Stir occasionally from thereon, cooking and turning down once on a low simmer. Do not let it cook down, just to marry flavors extremely well, and vegetables and fruits are tender. This is a wonderful BBQ sauce, and I am content to share it with you.
This will only make up 1 quart jar plus 1 pint, so do the math if you are wanting to can up a large batch, but refrigerate. (Can by oven method, not boiling water bath; much easier and cleaner process.)

Spread 1/3 cup dark BBQ sauce; leave 3/4-inch border.
Have BBQ chicken ready, made ahead of time: Mix 2 tablespoons BBQ sauce and 1 teaspoon olive oil in a small bowl, lather 1/2 pound skinless-boneless chicken breast. Place in a 425 degree oven, cook 20 minutes then let cool. Chop into 1/2-inch cubes and evenly place over pizza sauce.
Add 2/3 cups grated smoked gouda over the chicken,
then 2/3 cups mozzarella.
Thinly slice 1 small red onion.
Place onto parchment paper on a pizza peel or an inverted baking sheet.
Bake 20 to 25 minutes. Finally top with fresh cilantro.
