Con Queso Dip

It’s football food– for chips.  It’s cuddling weather, movie time– grab a snack.
Con Queso Dip ~
~ Skirt in the Kitchen ~


Chop 1 bunch fresh cilantro and 3 scallions–
Brown 1 pound Italian sausage with half of the cilantro and all of the chopped scallions.
Add the remainder of cilantro to the cooked sausage, and stir in along with the juice of half a lime.
Place in a crock pot; add 1 block cubed plain Velveeta cheese, 8 ounces cream cheese, 1 4.5-ounce can green chiles, 10 ounces drained Ro-tel, 1 pound 8 ounces picante sauce, ground roasted cumin.  Choose good quality ingredients, hot or mild (my choice:  hot picante, hottest Ro-tel).
Melt entirely before serving with chips.  Perfect for a cold, rainy night and a good movie rental.
