Red Hot Whiskey Chili

Red Hot Whiskey Chili ~
~ adapted from Midwest Living ~

In a 6-quart heavy pot, cook bacon over medium heat.  Drain on paper towels, discard the drippings, then chop the bacon and return to the pot.  Add 1 pound ground beef
and 2 red and/or green sweet peppers and 1 large onion– preferably a purple/red onion; if not, make do with a white or yellow.
Brown until tender; drain the fat, remove mixture from the pot.
Turn off the heat.  Stir in 1 1/2 cups whiskey into the pot, scraping the bottom of the pan.  Turn on the heat again and boil, then simmer uncovered for 5 minutes.  Put the bacon and beef mixture back into the pot.
Add 2 cans (15-16 ounces, each) kidney beans.  But drain and rinse the beans, first.
Chop or snip 1/2 to 1 full can (11-ounce can) chipotle peppers in adoba sauce; add to meat mixture.
Pour in 2 12-ounce cans or bottles dark beer (Guinness), then 3 cups beef broth, 1 6-ounce can tomato paste, 1/4 cup packed brown sugar, 3 tablespoons liquid smoke, 3 tablespoons bottled hot sauce such as Frank’s Red Hot or Texas Pete.  Mix in 1 teaspoon chili powder and 1 teaspoon of packaged chili mix seasoning.  Bring to a boil, reduce heat and simmer for 2 hours, cooking down while uncovered.  Stir occasionally to keep from burning.
Sour cream, chopped scallion, shaved sharp cheddar, and Doritos Taco Seasoning Tortilla Chips compliment the chili.

    Chilli was a hit, everyone really enjoyed it. Only a couple people thought it was a little too spicy. But all in all was a succuss the flavors meshed very well together. A must have for all recipe keepsakes… YAY GIANTS lol
