Irish Soda Bread ~

Set the oven temp to 375 degrees Fahrenheit and line a sheet pan with parchment paper.
Combine 4 cups all-purpose flour,
4 tablespoons sugar, 1 teaspoon baking soda,
and 1 1/2 teaspoons kosher salt. With an electric mixer fitted for a paddle attachment, cut in 4 tablespoons cold unsalted butter into flour.
Zest an orange for 1 teaspoon. Lightly beat with a fork in a separate bowl the zest, 1 3/4 cups cold buttermilk and 1 extra-large egg beaten well. Slowly mix on low speed buttermilk mixture into flour mixture.
Mix 1 cup dried currents with 1 tablespoon flour and mix into dough as well.
Dump on a well-floured board and knead and form into a round loaf.
Place on prepared sheet pan, and with a serrated knife, cut an X into the loaf.
Bake 45 to 55 minutes.
