I don’t like salt around my rim, do you?
Grate peeled fresh ginger for 1/2 cup. Bring 1 cup water to a boil; add 2 teaspoons sugar and ginger. Turn off the heat and let steep 10 minutes. Strain then pour into a cool dish and place in the refrigerator for 30 minutes before use.
In a large glass, mix contents: 3 freshly squeezed limes (then strained), 3 ounces white tequila, 3/4 ounces triple sec. When 30 minutes is up, when the ginger syrup has chilled, add 1 ounce to the mixture. Pour over ice.
