Grandma Friendship’s Raisin Pie

~ adapted from Kristen Aiken ~

Have chilled (1 hour) pie crust:  Have pre-made in a food processor– combine 3 cups flour, 1 cup unsalted butter plus 2 tablespoons, 1 teaspoon salt, 1/4 cup ice water– more if needed.  

For the filling:  Mix together 2 1/2 heaping cups dark raisins, 

2 cups cold water, 2 tablespoons cornstarch, 3/4 cups sugar, 3 tablespoons apple cider vinegar, 1/2 teaspoon salt, 1 1/2 teaspoons ground cinnamon, and 2 tablespoons unsalted butter.  Bring to a boil; turn down the heat, let cook slightly thick.  Cool before putting into pie shell.

Place in the oven at 450 degrees Fahrenheit for 25 to 35 minutes, baking until bubbly.
And exceptional pie, not too rich.  Great with vanilla ice cream.
