Southern Skirt Edition ~ “Skirtin’ Around the South”

Horseradish Dressing:
2 tablespoons prepared horseradish
2 tablespoons champagne vinegar or white wine vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1/2 teaspoon coarse salt
1/8 teaspoon pepper
1/4 cup extra-virgin olive oil
Combine together; incorporate olive oil– stir while pouring in a steady stream.
Top lettuce with chopped hard boiled egg and a drizzle of dressing.
Matzo-Crusted Chicken Cutlets: Dip cutlets into whisked egg, then into Matzo meal; fry in safflower oil. Spritz with lemon.
