Amaretto Strawberries
~ Skirt in the Kitchen ~
Thickly slice strawberries with sweet mint.
Add a good amount of cinnamon sugar
and amaretto liqueur. Squeeze a few squirts of fresh lemon, then stir together and allow to rest for 1 hour before serving.
Classic Old Fashioned Tapioca Pudding ~ adapted from Bob’s Red Mill–
Soak for 30 minutes in 1 1/2 cups water 2/3 cups pearl tapioca.
After soaking, add 4 1/2 cups whole milk, 1/2 teaspoon salt,
1/2 cup sugar, and 4 lightly beaten egg yolks. Constantly stir over medium heat until it reaches a boil, then turn heat to low setting for 10 to 15 minutes, stirring often.
Beat the egg whites with 1/2 cup sugar
until soft peaks form. Gently fold 3/4 cup hot tapioca into egg whites, then fold all of the egg whites into saucepan of tapioca. Keep folding over low heat for 3 minutes. Turn off the heat and allow to cool for 15 minutes. Add bourbon vanilla, 2 teaspoons. Serve warm or cold.
