Toast 1/3 cup sweetened coconut in a 400 degree oven or over the stove top in a small skillet. Allow to cool in a dish set aside.
Blend together 3 tablespoons sweetened condensed milk, 2 tablespoons heavy cream, the juice from 1/2 of a lime well squeezed, and a pinch of salt. Drizzle over seedless watermelon cut into chunks, about 5 cups.
Add the toasted coconut and ground cinnamon. Mint makes it even better.
