Skirt in the Kitchen
If not for a complimentary side in a full meal, let it be a snack– Use golden potatoes, small ones. Slice and quarter after peeling. Drizzle with olive oil, then with a heavy sprinkle of poppy seed and lemon pepper. Don’t skimp on the olive oil. Don’t forget the fresh thyme and coarse salt. Toss and coat, well. Bake at 400˚ on parchment paper, making them crispier on the edges. Cook-time is 30 to 40 minutes; turn after 30, not halfway. Break out the ketchup. These are crispy with soft centers.
