Autumn Medley

These compliment each other in a round-about way; not to mention, the nutrition factor in which you do not have to sacrifice taste for the sake of nutrition, for those of you who believe that eating healthy is a bland course of food drawn together claiming it not a delicious meal.  These are Fall foods, some of many.  And this is a delicious way of having your nutrition on a plate. 
This can be one of the side dishes with roasted chicken, pork chops and nearly any other meat of your choice for in the Fall.  Carmelizes in the oven; does not forsake tradition.
Autumn Medley ~
– Skirt in the Kitchen –
2-3 sweet potatoes
1 Barlett pear
1 Granny Smith apple
Chopped dates
Raisins
Pecans
Brown sugar
Coarse salt
Cinnamon
Lemon juice
Peel and cut produce, placing into roasting pan.  Drizzle with enough olive oil so that seasonings and brown sugar adhere to all sides of food peices.  Sprinkle a light amount of salt to help bring out the sweetness in its unique combined flavors.  Coat with fair amount of brown sugar, stir, repeat once more for desired full amount of sweetness. 
After all the food ingredients have been added, sqeeze juice from lemon, just sprinkling over the top of the medley, then stir one last time.  Place into a 375 degree oven with a lid on the roasting pan to jump-start the cooking time of sweet potatoes since they will need longer time to cook than the fruit.  After 10 minutes, take off the lid, keep it off, stir the medley.  Cook for 10-15 minutes more, possibly stirring one last time.
When out of the oven, you will find that the pecans have a nice toasted flavor with a glaze over them from the mixture of foods that they were cooked in.
