Potato Bean Leek Soup

You say is doesn’t look good?  Probably not.  It’s been a foul day,   But, yes, it is good because I made the soup the other day, and I have warmed up the last bowl– tonight.  So today’s cooking does not count, ha-ha.  Ha, ha, Cris!–  H A    H A    H A.  –No, I did not say, “ho.”  I’m aware that you are not into holidays.  Aw, the truth be known that I am married to Scrooge…  Yes, I’m kidding– seriously.  (But seriously, he is Mr. Scrooge.)
Here, let’s look at the ads and wish what you’d like to purchase on Black Friday.  Oh, that’s not funny?  Okay…  it’s not.  Sorry, Dear.  A Samsung LED?  YES!

Potato Leek Soup ~
~ Skirt in the Kitchen ~
1 or 2 leeks, you prefer what you want…
Couple of bay leaves
Good sprinkle of thyme
Salt & Pepper
2 tablespoons butter
Fried bacon into bits, 2-3 slices
1 14-oz can Great Northern white beans
1/2 cup Cognac– Yes!  This gives it a nice flavor.
(34 days, 2 hours, 54 minutes, 35 seconds before it’s Christmas…  Thanks, Cris…  Yes, hope we get the kids’ stuff.  Sorry ’bout the TV.)
4 1/2 cups beef broth
1 1/2 pounds diced potatoes
3/4 cup heavy cream
Simply fry the bacon, first…  then the leek; dice the potatoes.  Commonly sense put everything together in the pan except for the heavy cream; bring to a boil, then simmer for 30 minutes.  Stir in the heavy cream to heat up if necessary.
