Spinach Frittata

Saute in a skillet of olive oil and 1-2 tablespoons butter– sliced or chopped onion, scallion or leek; then minced or finely chopped garlic, salt & pepper…

Add spinach, stems and all… these will wilt down quickly, stems tender; so toss to finish sauteeing…
Having 8 whipped eggs ready to pour over, and on medium-low heat, pour gently onto the spinach and sauteed onions and any other vegetables you wish to have in your frittata…  Drop in 1/2 cup grated cheese.  Cook softly, having a light doneness around the edges, only; may want to add fried bits of bacon and sliced-open cherry tomatoes on top.  Then place in 425 degree oven until it is set bearly done for moistness and quality. 
When out of the oven, grate parmesan over frittata.
Got to have it for breakfast– or supper; any kind of frittata, any way you want it when you don’t have the time to cook long hours over the stove, when you’re just too tired but you want something more than a bowl of cereal– when you want:  Real Food– without much bother– at home.  Get it made, plop it on a plate, grab a fork, snuggle up under your favorite throw on the couch, put in a show on the TV– eat and be happy, warm and snuggly on a cold winter evening when all you need is rest and relaxation.  Take time out for yourself.  Don’t you deserve it?
