Jackal & Hyde Key Lime Ham ~

Set the oven to 325 degrees Fahrenheit.
Prepare the meat, removing the outer casing; score the fat, little that is left to give its fat-juice to cook inwardly. Place cut side of portioned ham downward onto a rack in a roaster, bone facing upward (always cook bone-in pork– better flavor). Inject the meat with the mixture of:
1 1/2 cups water poured into a pan over the stove; to that, add the following to heat:
1 cup Star Golden Key Lime Marmalade
1/4 cup Dijon
1/2 cup Apricot brandy
1/4 cup balsamic vinegar–
Bring to a slight boil. Turn down to low heat. Inject into the center of the ham with the liquid.
Place meat in the oven and cook for 1 hour. From then on, every ten minutes, baste the ham with the liquid; towards latter baking period, the key lime mixture will thicken. This will not be thoroughly cooked until internal temperature reaches 140 on the meat thermometer.
Let the meat rest for 15 minutes before carving thin or thick slices.
