Sausage Horseradish Potatoes ~
~ Skirt in the Kitchen ~
2 pounds potatoes, gold and red-skin–
yellow, red bell peppers with white onion–
Dice 3 serrano peppers; sprinkle in red pepper flakes.
Add pimientos and chopped apple-flavored bacon.
Season with coarse salt, coarse black pepper, cardamom, ground cumin as well as cumin seed.
Slice 2 polish sausage links and cook into potatoes. Stir in 3 tablespoons prepared horseradish.
Tear 1 bunch fresh cilantro, mix in towards the end of cooking, but allow time for cilantro flavor to blend with seasonings and mixture of food.
