Kale Chili Bean Spaghetti

It’s Kale Chili Bean Spaghetti to use up the leftovers in the ‘frig.  And what da ya know–it made a fantastic dish!–Was it the sweet wine?!  It’s pretty good.  It’s called, being quirky in a good way, like an old ’70’s song on the radio–Who Loves You from 1975 by Frankie Valli & The Four Seasons.

I love the oldies, don’t you?–The clothes were strange, the photos were monochrome or way off the color schemes.  The hairstyles and the frames were a bit on the odd side, but they had that certain something in their charisma of music. Maybe it was just a great love song, or words to one.  Whatever the reason, people seemed to be more grounded, seemingly more authentic back then.

Crumble and brown ground beef with red onion–or any kind of onion that you want to use–but do sprinkle some Old Bay and a little salt…

I want a medley of peppers from the garden–banana, green bell, and one for heat.

If you have excessive grease in the skillet, just shove the meat content over to one side and dab up the grease with a clean paper towel.

It’s one way of doing it–“another way to skin a cat!”...

Make sure the kale is torn away from the main stems so you don’t bite down on anything tough–because kale stems are like that.  Take a few minutes to soften the leaves into the hot meat and vegetable mixture.

I had close to 2 cups tomato juice that I decided to pour in since I didn’t have spaghetti sauce previously made or purchased.  I didn’t get around to making that Bloody Mary!

To thicken it up, and to use up some chili beans–like the tomato juice I had in the ‘frig–I added almost if not a whole small can of chili beans, the starchy sauce in the can as well.  Then I poured in a 28-ounce can of good crushed tomatoes, the Cento brand–which I love.

I seasoned the batch with Italian seasoning, garlic powder, and onion powder–even though I chopped and added some onions for it when I cooked the meat.

To take it a step further, I put in a tablespoon or two of sweet blackberry wine!

THEN I added mild cheddar!  Need I stop?!  I ought to, and must at this point, lol…  Blame it on my good taste for wine, Crown Valley.  It’s my favorite.
