“These are Polar Express cookies, Mommy.” It is the first Christmas cookie that we make, each year, before any other.
Farmhouse Chocolate Crinkles ~

In a double boiler or microwave, melt 4 ounces unsweetened chocolate. If you do not have chocolate baking bars on hand, measure 12 tablespoons 100% cacao powder (good quality cocoa) with 4 tablespoons oil to equal 4 ounces of chocolate. Add to mix a little at a time to absorb the powder into the oil.
Mix together 2 cups granulated sugar and 1/4 cup vegetable oil.
One at a time, beating well after each addition, add 4 large eggs.
Beat in the melted chocolate and 2 teaspoons vanilla extract.
In a separate bowl, whisk together 2 cups flour, 2 teaspoons baking powder and 1/2 teaspoon salt. Add flour mixture to the chocolate batter. Chill overnight for a stiff dough to roll into 1-inch balls in a 350 degree oven. Roll unbaked chocolate balls in confectioners’ sugar, then place on parchment paper, and bake for 10-13 minutes, just barely set for a gooey cookie center. Let them cool on a baking rack in the pan for 2 minutes, then transfer onto a rack.
