Spicy Fried Chicken Legs and Gizzards, Fried Assorted Peppers, Fried Cheese Cubes ~
~ Skirt in the Kitchen ~

Into cornstarch, sprinkle heavily– freshly ground black pepper, kosher salt, red pepper flakes, ground cayenne pepper, dried tarragon…
Wash a medley of peppers– sweet mini bells, Anaheim, pablano, jalapeno…  and scallions.
Slice, cut, take out the seeds, remove the pepper ribs.
Dip into cornstarch, first; then into whisked eggs, then back into cornstarch…
Deep-fry into your choice of oil.
Do the same process with chicken.
Cut cheese into large cubes.
This is really good for frying.
Be careful not to burn your mouth.
Dip the gizzards, same process.
And it’s done!
