Oatmeal-Flax Chocolate Chip Cookies ~

Preheat oven to 350. Line baking sheets with parchment paper. Whisk together 1 1/2 cups flour, 1 cup quick-cooking oats,
1/4 cup finely ground flaxseed,
1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon.
In a mixing bowl, beat 1 1/2 sticks (12 tablespoons) unsalted butter, 1 cup granulated sugar, and 3/4 cups packed dark brown sugar. Beat in 2 eggs, one at a time, incorporating well.
Mix in 1 teaspoon vanilla extract. Add the flour mixture and beat until just combined.
Stir in 1 cup chocolate chips… and 1/2 cup Hickory Farms soft mints if you like– or 1/2 cup each.
Bake until golden brown 10-12 minutes. Let the cookies cool 3 minutes on baking sheets before transferring to wire racks to cool completely.
