Skirt in the Kitchen
OPERATION SKIRT – serving the men and women of the United States Military
[http://www.woundedwarriorproject.org/]

This needs no introduction, really.  It doesn’t call for a thin coat of icing, either.  It’s good in its own way without a sweet addition of a runny, gooey top of something processed; just golden honey from the bees.  It’s something plain and simple with some wholesomeness.  It’s what you’d like to pack when hiking in the woods with your family on a crisp weekend when the weather is just getting warm but the mornings and nights have a slight chill.  It’s awesome to have with coffee that you brewed outdoors over a campfire; sitting on a rock from hiking, watching the birds and listening to the sounds of nature– that part of the world where nothing changes in its habit, the innocence that still exists in the wild.

These might be just right for an after-school snack for the kids to grab when flying through the door.   And maybe you want these when you’re taking a quick break from hammering a nail, building that outdoor porch or deck that your wife fervently wanted you to construct; you know, the one she was on your back about, the one in the magazine that you had to master and make for the warm months ahead?  Build it, make it happen, and enjoy the process.  Give yourself a pat on the back for your hard labor and for providing for the ones you cherish.  It’s called appreciation.

Preheat oven to 325º and grease an oblong shallow baking pan.  Combine 2 cups flour, 2 teaspoons baking powder, 2 teaspoons baking soda, 1/2 teaspoon salt, 3 teaspoons ground cinnamon, and 1/2 teaspoon ground nutmeg.
Beat 4 large eggs; mix in 1 1/4 cups oil, 1 cup packed dark brown sugar, 1 cup granulated sugar, and 2 teaspoons vanilla extract.  Stir in 3/4 cups chopped almonds, pecans or walnuts.  Add 1/2 cup dark raisins, 3/4 cups chopped prunes, 1/2 cup natural peanut butter (too dry with the other kind of peanut butter; a natural brand has good amount of nut oil), and 1/2 cup Quaker Steel Cut Old-Fashioned Oats.
Bake until just set with crispy edges.  Check it between 20 to 25 minutes.  When still warm, poke holes all over, going from top to the bottom of the pan with a skewer to drizzle honey, brushing it lightly.
