Skirt in the Kitchen
Cook 1 pound cubed chicken breast in canola oil; season with Tony Chachere’s Original Creole Seasoning. When cooked through, cover to keep from drying out while making the sauce. Brown 1 pound sliced shittake mushrooms in 1/2 stick butter. Heat water to cook penne pasta.
For the sauce, in 1/2 tablespoon olive oil, melt 1/2 stick butter. Mince 3 cloves garlic, stir well into butter. Add 1 pint heavy whipping cream. Heat over medium heat. Add 1 cup shredded Parmesan and 1 cup mozzarella, stir to melt. Season with creole seasoning and freshly ground black pepper. Combine chicken, mushrooms, and pasta into sauce. Garnish with shredded Parmesan and fresh thyme.
