Oatmeal-Peanut Butter Pistachio Cookies with Dried Fruit and Coconut

[Operation Skirt]
It’s a good autumn cookie to put in a lunch bag, to snack on when taking a break from raking leaves, and it’s a good cookie to have with coffee.
 
Preheat oven to 375 degrees Fahrenheit.  Beat 1 stick softened unsalted butter, 1/2 cup granulated sugar, 1/4 cup packed dark brown sugar, and 1/3 cup creamy peanut butter.  Add 1 egg and 1 teaspoon bourbon vanilla extract.  In 3 portions, add into mixture the blend of 1 cup flour, 1/4 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon coarse salt, and 1/8 teaspoon ground cinnamon.  In scant portions, even amounts, add very finely chopped pistachio nuts (helps with consistency of texture when this fine), golden raisins, chopped dried cherries, chopped dried apricots, and toasted shredded coconut.  Combine well into a moist batter.  Bake until lightly browned.
