Skirt in the Kitchen
This was made quickly, like in a snap. They still don’t know I put pumpkin in the sauce.
Brown 1 pound ground beef. Towards the end of browning, add 1 medium-size chopped white onion and 2 cloves finely chopped garlic. Drain the grease. Finely chop 3 to 5 adobo peppers; stir into the meat (2 for a mild sauce; 5 for a kick). Add 2 24-ounce cans pasta sauce, 24 ounces pumpkin puree, 1/2 to 3/4 cups ketchup, 1 tablespoon red balsamic vinegar, Italian seasoning, sprinkle of salt, and chopped fresh parsley.
Heat through, cover and keep warm while bringing salted water to a boil for angel hair pasta.
Mix and blend sauce into pasta.
