Peel and slice English cucumber for 2 pounds. Slice in halves 1 pint tomato or grape cherries.
Thinly slice 1 Vidalia onion and add 2 tablespoons chopped parsley, 1 tablespoon apple cider vinegar, 1 tablespoon olive oil, salt and pepper. Let stand for 10 minutes before serving.
