Salad ingredients: Romaine lettuce, curly parsley, golden cherry tomatoes, red onion, carrots, homemade croutons, grated Parmesan.
For the croutons: Cube white Italian bread, drizzle with olive oil, add garlic salt and dried parsley; cook at 450 degrees and toss halfway through browning.
My father’s dressing:
There are no measurements for the dressing; season and choose quantities to meet individual taste– extra-virgin olive oil, minced garlic, minced onion, honey mustard or horseradish-mustard and honey, red wine vinegar, salt, pepper, bacon pieces, bacon grease, brown sugar (Add just a little of lemon juice.)… After several bacon strips (preferably smoked) has been fried, pour combined ingredients into skillet and heat; whisk well. Drizzle and serve warm over chilled salad. You will have left over dressing; is even better the next day, and can be used in a meat dish with pasta– or pasta with or without red meat added to the dressing and salad, all of it combined– a fabulous dish.
