Southern Skirt Edition ~ “Skirtin’ Around the South”
I received this recipe from a good friend of my mother’s, now a great acquaintance of mine, Margie Bolt– Thank you for sharing this with me (:
Crush 1 package of Ritz crackers; mix with 1 stick melted butter
and 2 tablespoons poppy seed. Set aside.
Place 3 or 4 (boiled) cut-up chicken breasts in the bottom of a buttered 9×12-inch casserole dish. Spread over the chicken a mixture of 2 cans cream of chicken soup and 8 ounces sour cream. Add the cracker topping.
Bake at 350 degrees for 30 to 45 minutes or until hot and bubbly– an excellent, satisfying meal.
