 To fill an entire bar pan 11 1/2×16 1/2 in size, use the soft peanut butter– this brand with the natural oils for a spreading consistency of batter baked to serve a large crowd.  If baking round cookies, choose chunky Jiff peanut butter. 
 [Recipe is included in the close of post.]  Pan cookies:  half unsalted butter, half white shortening; round cookies:  all white shortening is used.
 For the pan cookies, use white spelt flour; for round individual cookies, choose all-purpose flour.
 Spread evenly, sprinkle with sugar, bake for 20 to 25 minutes in the pan, a soft feel when removing from the oven– they will have a tender cookie texture when cutting into squares.
 This is my mother’s recipe that she has used for years– the pages declare it.  This is a delicious cookie.
