Boil salted water in a pot for 1 pound spaghetti. Cut 8 large garlic cloves into slivers.
Reserve 1 1/2 cups spaghetti water. Set aside the pasta until ready to add.
Heat 1/3 cup olive oil in a large skillet. Cook the garlic until lightly golden in color.
Add 1/2 teaspoon red pepper flakes. Pour in the spaghetti water, cook down to about a third. Add the drained pasta, chopped flat-leaf parsley,
and 1 cup Parmesan. Salt to taste.
Top with more red pepper flakes if desired, parsley and Parmesan.
