Snickerdoodles

~ adapted from Trisha Yearwood ~

Preheat oven to 400 degrees Fahrenheit.

Cream 1/2 cup (1 stick) unsalted butter, 

1 1/2 cups sugar, 1/2 cup vegetable shortening,

and 2 medium eggs for a soft interior– Do not use large eggs.

In a separate bowl, sift 2 3/4 cups all-purpose flour, 2 teaspoons cream of tartar, 1 teaspoon baking soda, and 1/4 teaspoon fine salt.

Scrape down the sides; incorporate well.   Stir in flour mixture.

In a small dish, combine 2 tablespoons sugar and 2 teaspoons ground cinnamon.

Shaped in balls, roll into cinnamon-sugar–

Bake, rotating halfway through baking period– approximate total time 8 to 10 minutes.  Store in an airtight container.
