In a food processor combine 1 1/2 cups all-purpose flour,
1 teaspoon yeast,
1 teaspoon dried basil, 1/4 teaspoon salt, and 1 garlic clove cut in half. Process for 10 seconds, then add 1 tablespoon olive oil. Scrape down the sides of the work bowl. Machine running, pour just enough water (1/3 to 1/2 cup) through the feed tube to form a ball.
Set the ball of dough on a lightly floured surface, cover with a damp cloth for 10 minutes. Preheat oven to 450 degrees Fahrenheit. Lightly grease a baking sheet if not using a pizza stone; sprinkle with cornmeal. Roll the dough in a 12-inch diameter circle. Transfer to baking sheet or stone, prick dough with a fork. Brush lightly with olive oil. Bake 6 minutes or just lightly browned. Immediately apply the sauce over hot crust.
Pizza sauce: Combine 1 well-drained 15-ounce can fire roasted tomatoes,
1 teaspoon balsamic vinegar, 1 teaspoon dried basil, 1/2 teaspoon dried marjoram or oregano, 1/4 teaspoon garlic powder, 1/8 teaspoon salt, and 1/8 teaspoon cayenne pepper.
Over the sauce, slice and add Roma tomatoes, then fresh mozzarella. Drizzle with olive oil, sprinkle with salt and pepper.
Bake 6 to 8 minutes more. Salt and pepper, again.
Top with spinach and basil,
and halved or quartered cherry tomatoes.
Add more salt and pepper.
