Crunchy Taco Pizza

[The crust in this recipe is very good; the pizza, superb.]

Make a cheesy dough:  Combine 1 1/4 cups all-purpose flour, 1/4 teaspoon salt, 1 1/2 teaspoons active dry yeast, and 1/4 cup shredded cheddar cheese.  Add 1 cup warm water, 2 tablespoons olive oil, and 1 teaspoon honey.  Stir vigorously for 1 minute.  Stir in as much flour as needed, up to 1 1/4 cups.  Turn dough out onto a lightly floured surface; knead 3 minutes.  Cover with a damp towel after shaping into a ball.  Let rest for 10 minutes.  

Preheat oven to 425 degrees Fahrenheit.  Grease a baking sheet if not using a pizza stone.  Lightly cover it with cornmeal.  Roll the dough, transfer to baking sheet, and prick with a fork.  Bake 12 minutes or until browned.

Brown 1 pound lean ground beef along with 1 small red onion cut in thin wedges.  Drain off any fat.


 Stir in 1 1/4 cups hot salsa– the hot spicy salsa will even out, get absorbed into the meat, not making it too spicy; just a slight kick of spicy heat.  

As soon as crust is out of the oven, spread the meat and salsa mixture.  Bake for 5 minutes.  Add 1 1/2 cups coarsely chopped tomatoes, 1/3 cup pitted kalamata olives, and 1 1/2 cups shredded cheddar; bake again for 10 minutes.  

Remove from the oven.  Top with lettuce and Tostitos brand Artisan Recipes Grilled Red Pepper & Tomato Salsa chips– that brand and flavor, the best for this pizza– You will not be disappointed.
